Lentil Soup


1 Cup Red Lentils, Washed And Drained

1 Onion, Chopped

4 Cloves Garlic, Minced

2 Tablespoons Olive Oil

1 Teaspoon Ground Cumin

1 Teaspoon Ground Coriander

Salt And Pepper To Taste

4 Cups Water

1 Lemon, Juiced

Fresh Parsley Or Cilantro, Chopped For Garnish


      1. In A Large Pot, Heat The Olive Oil Over Medium Heat. Add The Chopped Onion And Sauté Until Translucent, About 5 Minutes. Add The Minced Garlic And Continue To Sauté For Another Minute.
        • Add The Cumin, Coriander, Salt, And Pepper To The Pot. Stir Until The Spices Are Well Combined With The Onion And Garlic.
          • Add The Lentils And Water To The Pot. Bring The Mixture To A Boil, Then Reduce The Heat To Low And Simmer For About 30 Minutes Or Until The Lentils Are Soft.
            • Remove The Pot From Heat And Allow It To Cool Slightly. Use An Immersion Blender To Blend The Soup Until Smooth.
              • Return The Pot To The Heat And Add The Lemon Juice. Taste And Adjust The Seasoning If Necessary.
                • Serve The Soup Hot, Garnished With Chopped Parsley Or Cilantro.
