Mujadara

Mujadara is a traditional dish made from lentils, rice, and caramelized onions. Here is a recipe for Mujadara:

Ingredients:

1 cup brown or green lentils, rinsed and drained

1 cup long-grain rice, rinsed and drained

3 cups water

2 onions, thinly sliced.

1/4 cup olive oil

1 teaspoon ground cumin

Salt and pepper, to taste

Instructions:

  • In a medium pot, combine the lentils, 2 cups of water, and a pinch of salt. Bring to a boil over high heat, then reduce the heat to low, cover the pot, and let the lentils simmer for 20-25 minutes, or until they are tender but not mushy.
  • In a separate pot, combine the rice, 1 cup of water, and a pinch of salt. Bring to a boil over high heat, then reduce the heat to low, cover the pot, and let the rice simmer for 18-20 minutes, or until it is cooked through.
  • While the lentils and rice are cooking, heat the vegetable oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 15-20 minutes, or until the onions are caramelized and golden brown.
  • Once the lentils and rice are cooked, combine them in the pot with the lentils. Add the cumin, salt, and pepper to taste, and stir well to combine.
  • Transfer the mujadara to a serving dish and top with the caramelized onions. Serve hot, garnished with fresh parsley or mint leaves if desired.
